Strawberry and Chia Jam
Natural jam is delicious! This superfood recipe cuts out the sugar and preservatives many commercial jams have, whilst boosting energy and omega-3 intake with the addition of Radiance Chia Seeds
2 cups strawberries – cleaned and chopped
1 cup boiling water
1/4 cup of Radiance® Chia Seeds
1/2 cup honey or an alternative sweetener of your choice
- Place all ingredients into a saucepan over medium heat and stir constantly as the chia seeds burn on the bottom of the pot very easily.
- Keep stirring until the mixture has reduced by half and has thickened. It will not be as thick as jam, but it will definitely thicken.
- Pour into a clean glass jar and allow to cool for 1 hour. Place in the fridge overnight to continue cooling.
- Once set, serve on light rye toast with a scrape of butter or coconut oil.
