Kale Chocolate Biscuits

Yes- I kid you not. These are biscuits made with kale.  Eating your veggies just doesn’t get much easier than this…

Makes about 10 biscuits

Ingredients:

1 tablespoon ground flaxseed

1 cup whole wheat flour

3 tablespoons Radiance Cacao Powder

2/3 teaspoon baking powder

Pinch of salt

1/2 cup applesauce

2 tablespoons of Radiance Kale Powder

3 tablespoons + 2 tablespoons almond or rice milk

2 tablespoons maple syrup

1/3 cup coconut or raw sugar

2 tablespoons coconut oil

Chocolate Chips ( if you like)

Preheat the oven to 180º C.

·      Make a “flax egg” by combining 1 tablespoon ground flaxseed with 2 tablespoons water. Set aside for 5 minutes to form a gel.

·      In a large mixing bowl, sift all the dry ingredients together – flour, cacao powder, baking powder, and salt

·      In a blender, combine kale powder with the apple sauce,   3 tablespoons of almond milk, and maple syrup until pureed. Add this to a separate mixing bowl along with the rest of the ingredients – coconut sugar, coconut oil, flax egg, and 2 tablespoons of almond milk. Whisk this for a full minute or two until all the ingredients are incorporated.

·      Slowly pour the wet ingredients into the dry and stir gently with a wooden spoon until mostly combined, but do not over mix.

·      Spoon this batter into biscuit-sized rounds and flatted them onto a baking sheet covered with baking paper. Then, bake for about 12-14 minutes at 170º C until cooked thoroughly.
