SuperFood layered pudding!

For the chia pudding

·       1/4 avocado

·       2 tablespoons chia seeds

·       2 dates, pitted

·       1/2 cup almond milk

·       1 tablespoon Radiance Cacao powder

·       2 teaspoons Radiance Maca Powder

·       Small pinch of sea salt

Combine all ingredients in a high speed blender and blend until smooth.

Chill the maca pudding for a few hours. In the meantime make your minty cashew cream…

For the mint cashew cream!

·       1 cup raw cashews soaked for at least 2 hours then drained

·       ¼ cup water

·       1-2 tablespoons maple or rice syrup or to taste

·       1/2 teaspoon natural vanilla extract

·       A drop or two of  good quality peppermint oil

·       a pinch of sea salt

·       Optional – ¼ teaspoon of Radiance Tropical Spirulina for colour

Throw everything into the blender and blast on high until thick and creamy.

To assemble- put a few spoonfuls of chia pudding into a glass and top with the mint cream. Voila – a super gorgeous and impressive summer pudding!
