Maca Chocolate Chia Pudding with Mint Cream

Its a gorgeous dessert (or breakfast), its full of healthy energy, good fats and minerals and it tastes amazing!

For the chia pudding
• 1/4 avocado
• 2 tablespoons chia seeds
• 2 dates, pitted
• 1/2 cup almond milk
• 1 tablespoon Radiance Cacao powder
• 2 teaspoons Radiance Maca Powder
• Small pinch of sea salt

Combine all ingredients in a high speed blender and blend until smooth. Chill the maca pudding for a few hours. In the meantime make your minty cashew cream…

For the mint cashew cream!
• 1 cup raw cashews soaked for at least 2 hours then drained
• ¼ cup water
• 1-2 tablespoons maple or rice syrup or to taste
• 1/2 teaspoon natural vanilla extract
• A drop or two of good quality peppermint oil
• a pinch of sea salt
• Optional – ¼ teaspoon of Radiance Tropical Spirulina for
colour

Throw everything into the blender and blast on high until thick and creamy.

To assemble- put a few spoonfuls of chia pudding into a glass and top with the mint cream. Voila – a super gorgeous, healthy and impressive summer pudding!
