Strawberry & Beetroot Granita

Lots of berries? Try granite – an easy and healthier dairy free icecream alternative with all the benefits and gorgeous colour of beetroot! Yum!

·       450 grams fresh strawberries, hulled

·       5-6 tbsp lime or lemon juice

·       2 teaspoons of Radiance Beetroot Powder

·       Honey or maple syrup to taste if too tart

·       1/2 cup water

1. In a food processor, combine all ingredients and process until smooth.

2. Pour mixture into a square pan (or equivalent non-stick pan) and place into freezer for a couple hours, uncovered is fine. After a couple hours, scrape the mixture with a spoon or fork to break it up a little. You can repeat this process in another hour. It should be ready after 4-5 hours of freezing, but this may vary based on your freezer.

3. When it’s firm enough, scrape/shave it with a fork or spoon and serve it in a glass or cup. So yum!
