Super Fluffy Coconut Vanilla Protein Pancakes
These pancakes are packed with protein and don’t contain any sugar! Super healthy, they can be eaten after a work out as a protein punch or as a super filling breakfast when a busy weekend lies ahead. Top them with your favourite toppings – we like berries and fruit but drizzle it in maple syrup and butter if you like!
3 tablespoons of flour
1/4 teaspoon of baking powder
2 tablespoons of Radiance® Pea Protein vanilla protein
3 eggs
1/4-1/3 cup of coconut milk
1. Whisk all the ingredients together until no lumps remain.
2. Heat a skillet to medium heat and add some coconut oil.
3. Drop the batter by 1/3-cup fulls onto the skillet.
4. Cook for about 2 mins per side, until golden, then flip.
5. Top with your favourite topping.
