Matcha Green Tea Icecream
This ice-cream is creamy, dreamy, refined sugar free and green! It also has a great big antioxidant kick thanks to the addition of Radiance® Matcha Green Tea and it tastes great! Makes 2 bowls.
1 can quality full-fat coconut milk
1 cup almond milk
1 dash of vanilla essence
2-3 tablespoons of Radiance® Matcha Green Tea
1/4 cup pitted medjool dates
1/4 cup honey or maple syrup
1/4 tsp xanthan gum
1. Place coconut milk, almond milk, matcha, dates and honey in a blender and blend until well combined. Add xanthan gum and mix again. Taste and adjust flavour as needed.
2. Transfer to a mixing bowl and let chill in the fridge for a few hours.
3. Pour into a pre-chilled ice cream maker and operate according to
manufacturer’s instructions.
4. After churning you can either eat it as soft serve or transfer it to a
freezer-safe container and let harden for 4-6 hours.
5. If you don’t have an ice cream maker, simply pour the blend into a
freezer-safe container, cover, freeze, and whisk every hour or so to aerate.
TIPS
Radiance® Matcha Green Tea is an antioxidant powerhouse, providing 149X the antioxidant power of regular green tea. Matcha can be added to drinks or smoothies or baking to give it a great big antioxidant kick. It can also be added to a tablespoon of hot water and then whisked through your choice of warmed milk to make a matcha latte. Yum!
