Yummy Chocolate Coconut Snack Balls

These are the perfect snack for lunchboxes, as they are high in protein, nutrients and don’t contain any refined sugars. They are so simple to make, the kids can make them themselves ( just mind the processor!)

1/4 cup Radiance Chia Seeds
4 tablespoons almond or peanut butter
3 tablespoons almond meal
3 tablespoons Radiance Cacao Powder
1/8 teaspoon sea salt
1 tablespoon maple syrup or honey
1 tablespoon coconut oil
1/2 teaspoon vanilla extract
1/4 cup unsweetened shredded coconut ( for rolling in)

Put all of the ingredients, aside from the coconut in the food processor and blitz until smooth. Then roll the mixture into small balls and cover the balls in coconut. Put into the fridge and refrigerate for at least two hours or until firm.
